INSTANT MASALA VADAS





I had recently posted a recipe for making adais, (spicy dals crepe) parup usili ( lentil crumble ) with same batter. Taking it a little further am posting a recipe ( same ingredients) for the powder to make these dishes and more , adding Masala vadas that can also be made using same mixed dal powder.


This is a no soak and grind recipe ...for those who want to have these dishes real quick, but who do not have a mixie/ blender etc , for travelers, for students away from home, husbands on business trips abroad . So send this spicy dal powder in packets with simple instructions. 

Recipe is common for all dishes mentioned above.


Ingredients



1/2 cup Chana dal
1/4 cup toor dal
1/4 cup moong dal
1/4 cup udad dal
1/2 cup any millet variety like kodo millet, foxtail millet, barnyard millet , or brown rice 
4-5 red chillies 
A big pinch of asafoetida powder or crystal 
Salt


Method



Clean the dals and other ingredients , blend to a little coarse powder in the mixie..you can do this by taking half of the ingredients and powdering to a fine texture like sooji/ semolina and the other half to a bit grit like in texture.
Mix both the powders and store well in a clean dry bottle.

1. Whenever you need to make masala vadais., just take the required quantity of the powder, add chopped onions, grated ginger, chopped green chilies, lots of curry leaves, 
make a little tight batter and use the powder only as much as is required to form a batter to mix ingredients, so that you get a crispy vada.

Deep fry in oil till cooked well by lowering flame .

Enjoy spicy hot masala vadas anytime by making this powder .



2. To make adai..soak the powder in little water to make a thick batter, add chopped onions ginger, curry leaves and make adai on a greased tava. 




3. To make lentil crumble, mix required powder with little water to make a thick batter , grease a plate , place batter ron it ( like dhoklas ) , steam till cooked,crumble when cooled and add to vegetables of your choice like variety of beans or capsicum.
