ALMOND CAKE ( EGGLESS)












Ingredients:

1 1/4 cup flour
1 cup sugar or less if you wish
3/4 cup butter 
pinch of salt
1 tsp almond extract

3/4 cup sliced almonds for topping
1 cup milk
1 tsp baking powder
1/2 tsp baking soda

1/2 cup slivered almonds ground to powder like almond meal.


Method


Preheat oven to 350 degrees F / 180 degrees C 
Take a bowl, combine the dry ingredients flour, baking powder,baking soda, almond flour, well.
In another bowl add sugar, butter, whisk well till light. then add all the wet ingredients 
Add the dry ingredients to the wet slowly , whisking at the same time to prevent lumps of batter. add more milk to get batter consistency for cake should not be too thin or very dense

Take a 9 inch cake pan,grease it well, dust and tap out excess flour, 
Pour the cake batter and tap to set well evenly.

Sprinkle the almond slices all over the top and bake till done approximate time 45 minutes , oven time may vary , so check the cake texture by inserting a toothpick or a skewer to see it it comes clean.
Makes a very moist cake.
