I love brittles and keep buying them very often. .It is very easy to make them at home too with some nuts and sugar , under 10 minutes is all it takes.
1 1/2 cup mixed nuts or almonds, toasted.
1 1/4 cup sugar
1/4 cup water
1 tbsp butter to grease the parchment lined tray , and little to add in the sugar syrup.
Toast the nuts and keep aside.Or scatter them on the greased parchment lined tray. You can add them directly to the hot bubbly caramelized sugar syrup too.Which ever method suits you.
Grease a parchment lined baking tray.
Take a heavy bottomed pan, add sugar and water , keep on low flame.
Melt sugar completely and wait till the syrup bubbles and caramelizes, quickly pour over the nuts scattered on the tray.
Let the tray cool completely, when the almond brittle is well set, break into pieces.
