Spinach , Methi, Mint, Coriander leaves Dahi vadas ( dahi bhallas )






This is a great way to make dahi bhallas /dahi vadas without the hassle of soaking udad dal and grinding etc, just make some yummy vadas with your favourite fillings like potatoes, some greens, or even veggies, spices, dip in batter  and deep fry  or shallow fry.

This amazing recipe was shared by a dear foodie friend Shefali Barot in one of the food groups. Sometime the most delicious dishes comes out of the most simplest ways and ingredients.

I have to fully agree this is one scrumptious way to have my favourite dahi vadas , and the best part is  the vadas are good and tasty just plain too ..but I love to save some for my daahi vadas.

By adding lots of greens like spinach leaves ( paalak ), a small bunch of methi leaves finely chopped, some coriander leaves and some mint leaves. I use some mashed potatoes just to bind it all together so the use of potatoes was minimal, a great way of having dahi vadas or even a spicy green vadas. You can use your favorite veggies too.

You can either deep fry or shallow fry or even try them in the famed appe pan/Paniyaram pan to be totally rid of the excess calories consumed  by deep frying.

Surely kids will love it ,  can be done fast , as all ingredients are simple easily available in  the kitchen . No need to soak and grind udad dal so you can be ready for a party treat  under 30 minutes .

Keep the yummy crunchy vadas ready , fried or shallow fried
, assemble just before serving keeping all the garnishing s ready .

Ingredients:

1 cup finely chopped  spinach ( paalak )
1 cup finely chopped coriander leaves and mint leaves together.
1/2 cup  finely chopped  fenugreek leaves ( methi greens )
3  cooked ,mashed  potatoes. 1 tbsp finely chopped chillies
1 tbsp ginger paste. ( add garlic paste if you like )
salt as required.
Pinch of chaat powder
Pinch of asafoetida powder.
3 tbsp corn flour to bind all the ingredients together.


For the batter


1 cup besan / chick pea four
1 tbsp rice flour or corn flour
A small pinch of soda
pnch of salt.
Pinch of red chilli powder.

Oil for deep frying.


For assembling.


1-2 cups thick fresh yogurt whisked.
1/2 cup green chutney
1/2 cup sweet chutney
Roasted powdered cumin powder
Red chilli powder
Chaat masala powder
1/2 cup fine sev 
chopped coriander leaves.

Method


Wash and clean all the greens, finely chop and mix all ingredients mentioned above for the vada under ingredients, to a smooth ball or a slightly flattened patty.

Keep the oil to heat well.
Prepare the batter with ingredients mentioned, should be little thick.

When the oil is hot, dip each prepared vada ball into the batte r, coat well thickly and slide into hot oil, cook well on all side by turning over.
Remove when vadas are done crispy and golden.
Drain well on paper towels.

Keep these fried vadas aside and assemble only when serving or else they will turn soggy.

How to assemble.


In a bowl keep some slightly hot water.
Dip each vada for few seconds and remove.
Keep vadas on individual serving bowls.
Pour thick fresh yogurt. Sprinkle  roasted powdered cumin powder, chaat powder if you like, some red chili powder.
Add other chutneys one by one, sprinkle sev, garnish with coriander leaves.
Serve immediately.
