7 cup Barfi ( Seven cup cake )







7 cup cake or the 7 cup Barfi is the most popular sweet among South Indians. Now made popular all over the country.
This is a  perfect sweet to make for beginners who are afraid to try Mysore paak , as it is simple, with a single line instruction.
Mix all ingredients, keep on gas, stir well till hardened and pour on a greased plate.That s  it!!

The rest is all tips and steps. I must thank Padma Venkat for her most delicious presentation recently in one of the food groups. I do not try recipes as soon as I see them ,but this was different, her pics were so captivating , the barfi looking super perfect so I couldn't delay any further and am glad I tried it.

The recipe is called  7 cup cake or 7 cup Barfi as  the total no of cups used comes to 7.
3 cups sugar, 1 cup milk, 1 cup coconut, 1 cup ghee, 1 cup besan flour. Technically I cannot call my recipe as 7 cups as I reduced the sugar from 3 cups as mentioned in many recipes. It makes it very sweet.

Choose any cup of your choice but use the same cup to measure all ingredients. 
Even a small steel tumbler will do to measure the ingredients.





Ingredients:



2  1/2 cups sugar ( although 3 cups is mentioned in almost all recipes , but it makes it too sweet, so decide )

1 cup ghee

1 cup besan flour/kadala maavu/ chick pea flour

1 cup freshly grated coconut or use desiccated. 

1 cup milk ( use full fat milk for a richer barfi )


Method:


Keep a tray or a steel plate greased  and ready.

In a wide deep heavy bottomed pan , preferably non stick add all the dry ingredients, mix well.

Add the milk, melted ghee, and now stir well with a whisk to remove lumps.

Keep on a slightly high flame in the beginning , stirring at the same time.

After 3 to 4 minutes reduce flame to medium , keep stirring , till mixture comes together frothing just like in Mysore paak preparation towards the end , reduce flame to low, without leaving hand, keep stirring.

Check a small drop in a plate, it should firm up immediately on cooling.

Remove from the gas and quickly pour the thickened frothing mixture on a greased plate.

Start smoothing with a smooth spatula gently.

Wait for 3-5 minutes before you start making the slice marks with  a knife.

Let the plate cool well.

When almost cool and the Barfi appears hardened, simply upturn the greased plate on to a bigger plate upside down.

You will get a perfect round  single  hardened cake  with the slices almost falling off neatly as you have already scored the top with a knife.

Store in container .
