One needs a big ccollectionof chutneys to replace the usual coconut chutney to go with different types of dosas or idlis.
This is a spicy green tomatoes chutney with onions and ginger , curry leaves , coriander leaves, very delicious and goes well with curd rice too.
2 cups of finely chopped raw green tomatoes.
1 medium size onion finely chopped.
3-4 green chillies
1 marble size tamrind.
1 cup loosely packed curry leaves.
1/2 cup finely chopped coriander leaves.
2 tbsp of chopped ginger.
salt to taste.
Pinch of asafoetida powder.
Oil to sautee the above.
1 tsp mustard seeds
1 tbsp sesame oil ( preferred)
In a big kadai, add some oil about 2 tbsp sesame oil , add onions, saute well till pinkish, add the chopped green tomatoes, green chillies, ginger, tamrind and keep sauteing till everything appears soft, till tomatoes have softened, onions turns transparent.
Just before removing from flame add the curry leaves and coriander leaves, toss for few seconds in the sauteed items, remove.
Let everything cool down.
Grind to a paste without adding water.
Remove with a spatula, without touching with fingers , hand to keep in good condition for a week .
Pour the tempering over the prepared chutney.
Stays good in the fridge for 5 days max.
Always use clean dry spoon.
Adding more onions, and garlic is your choice.
Red chillies can also be used.
curry leaves and coriander leaves will add to the taste and make it healthy too
