Ready to use Mixed Millets Adai mix







The health benefits of millets is now known to all considering the multitude of millet recipes that abound in internet.
I have discussed else where about the nutritional value of millets and how to incorporate them in our recipes.

To make this ready to make Mixed Millets adai ( healthy multi grain  crepe), the recipe is given uder.


Ingredients



1/2 cup kuthiraivali millets ( barnyard millets )
1/2 cup  saamai millets
1/2 cup Thinai millets
1/2 cup varagu  millets
( You can also make your own combo of millets used to make the recipe )

1/4 cup Moong dal
1/2 cup toor dal
1/2 cup chana dal 

4 -5 red dry chillies
1 tsp Asafoetida powder
Salt to taste
Curry leaves.



Method


Clean all the dals and millets and if you so wish, rinse thoroughly and  dry well. I just cleaned the dals and millets and did not soak them as I got the grains from a health store selling only organic products. Microwave can also be used to heat and dry the grains quickly.
There should be absolutely no moisture in the grains or else the ground powder will spoil quickly.


Blend to a little coarse powder all the ingredients for the adai, including curry leaves. Let the ground powder cool well. Store in a airtight container.

  To make Adais.


Take required quantity of adai powder, add some water, stir well to get a thick batter. Add salt if not added earlier.
Prepare adais after an hour to give some soaking time to the ground powder.

Heat a skillet, grease well, pour the batter in the centre, make quick circles of the batter spreading , but not to thin as adai is typically made thicker than dosa.

Pour drops of sesame oil ( preferred) around the  edges of the Adai to get a crispy end.
Remove and flip . Let cook well on both sides. 
Remove and serve hot with sambar, avial, chutneys  and some jaggery.


Store this powder in airtight container and if planing to send with kids or hubby leaving home on travel, pack in ziploc pouches with necessary instructions.

This is very convenient and healthy way of having delicious home made adai without compromising on quality and taste.
A great boon to people on the move, no ened to carry gadgets around, all you need is a skillet and some basic provisions like salt, oil etc.
