Chocolate Strawberry cake with Whipped cream frosting ( eggless)

This is a perfect cake for the days when you want to dig into a moist chocolate cake with some fruit and a light whipped cream frosting.

This cake is the simplest as it doesn't involve lengthy procedures or baking techniques  yet looks like you slaved a lot to put it up...being a double decker kind of cake.

The option is to bake one cake, slice horizontally to neat slices and use it in the recipe or go for baking two tins of identical cakes and use it to sandwich cream and fruit.

Strawberries were the only fruits on hand so I used them fully .

1 3/4 cup all purpose flour
1 3/4 cup sugar   ( the original recipe mentions 2 cups sugar which Ifelt was too much, so reduced the qty...)
3/4 cup unsweetened cocoa powder ( Hershey's)
1  1/2 tsp baking powder
1  1/2 tsp baking soda
1/2 tsp salt
2 eggs ( replaced with 3 tbsp yogurt by me )
1 cup milk
1/2 cup oil
2 tsp vanilla extract
1 cup boiling water
Strawberries as required for decoration, approx 1 cup .
Dark Chocolate shavings.

Whipped cream frosting

1 cup heavy cream
1 tsp vanilla extract
1 tbsp powdered sugar


Preheat oven to 350 degrees F ( 180 degrees C )

Take 2, 9 inch pans, grease well, dust with flour and tap out excess flour.
You can also line with parchment.

Take large mixing bowl, sift all dry ingredients, mix well.
In another bowl add all the wet ingredients one by one, mixing well.Beat on medium speed for 2 mi nutes.

Lastly stir in boiling water to wet ingredients.
Add the  all the  wet ingredients to the dry and keep folding gently.

The batter will appear thin like a pouring consistency, but dont worry, it will bake through  to well, light and airy moist cakes. Divide the cake batter into two tins if you plan to bake separately.

Bake for 35 minutes till done or till a toothpick inserted comes clean.

Remove cakes from oven , set aside to cool.

To prepare the Whipped cream frosting

In a large bowl add the heavy cream , vanilla extract and  sugar ,  whip till stiff peaks are   about to form, Dont whip too much , or else you will get butter.

After the cakes have cooled, you can slice off the thin dome like top from the cakes  to get a flat surface which will hold the other slice of cake perfectly one over another.

Slather the prepared whipped cream on the top of each cake and place one on top of another arranging slices of thin strawberries between the slices sandwiching them over the whipped cream.

Decorate the top with more cream , arranging strawberries over the top, and sprinkle dark chocolate shavings.

Tastes good when chilled and slices well too.
