It is such a boon to have these ready to make upma mixes at home or send it with those travelling. We see so many branded products in the stores so I got inspired couple of years ago and been making these ready to cook mixes in my fridge. Comes very handy when you have guests, or do not have the urge to cook in the kitchen . Just a microwave will do if you want your kids to take care of themselves. The ready to make mix is basic ingredient to make 1. Rava Upma 2. Rava Idlis 3.Rava dosa The mix makes around 500 grams .
Ingredients: 3 cups of Bombay rava /upma rava 3 tbsp ghee or oil 1 tsp mustard seeds 2 tsp chana dal 1 tbsp finely chopped green chillies 1 tsp grated ginger some curry leaves. 1 tbsp cashew nuts ( optional)
In a pan add the ghee or oil, let it heat up, splutter the mustard seeds and add the chana dal, let them turn golden.Add the green chillies, ginger, curry leaves, cashewnuts. Remove from the pan. Keep aside.Now Add the rava in the pan and roast separately with more oil or ghee. The sooji must turn lightly golden and look crispy. Remove, let it cool. Mix both the tempering items and the rava, mix well. Let cool completely and store in air tight container or ziploc bags . Stays good for 3 month in the fridge.

Measure a cup of this instant mix, add to 2 1/4 cups of boiling water, with required salt etc. A tbsp of oil or ghee may be added.( If you have frozen vegetables or fresh vegetables, chop them fine add to boiling water.). Pinch of turmeric powder may be added if you wish. Cover with a lid, lower flame. Stir occasionally , till the water is absorbed completely and the upma is done. . Check the link too to get an idea. Measure the rava prepared, add a pinch of eno salt or cooking soda, salt, and some curds to make a idli batter. Keep aside for 10 minutes. Grease the idli moulds, add more water or buttermilk to idli batter if it becomes thick. Mix batter well and spoon onto idli moulds. Steam cook for 12 minutes or till idlis are done. Isnt it a great way of saving time by preparing a mix in advance and able to make two dishes. So dont pay more for ready mixes, instead make your own and save time and money.
