Curry Masala powder /Poriyal Masala powder is used while preparing daily poriyals. Poriyal in Tamil means any sauteed , fried, dry vegetables either one or two with or without onions.
The basic ingredients used to make simple Poriyal/Pallya ( in Kannada ) are turmeric powder, asafoetida powder, cumin seeds, mustard seeds, red chillies, split udad dal, chana dal . These are simple seasoning ingredients used to make a dry vegetable curry. Adding a tbsp of the aromatic curry powder will elevate the taste of the vegetable .
It is a great thing to have some ready homemade curry powder for all your daily sabjis /poriyyals /Pallaya.
This is a great aromatic powder which adds the taste to the simple everyday poriyal like cabbage, beans, okras , beans, carrots and just about all dry sabjis.
While this is also available in all stores in ready made packs, there is nothing like freshly ground powder easy to make at home and store in small batches for a fresh weekly or fortnightly requirement..
Curry masala powder for poriyals/dry sabjis.
1/2 cup coriander seeds
2 tbsp cumin seeds
1 tsp pepper
15 red dry chillies
1/2 tsp fenugreek seeds
1/2 cup curry leaves
1 tsp turmeric powder
1/2 cup chana dal
1/4 cup udad dal
1 tsp asafoetida powder
salt to taste
1 tsp oil
Dry roast all ingredients and when cooled grind to a fine powder
Store well in an air tight container .
