These yummy bits of bite sized deliciousness called ebelskivers , also called as sweet paniyarams in our country is made in a ebelskiver maker almost similar to our appe/paniyaram pan with indentations or wells in which the prepared batter is poured and cooked on all sides , removed with skewers.
They make amazing sweet treats to kids and I personally think these are great to be sent to kids snack box.
As it is small , like pops or bite sized , the portion is controlled so your kids can have them in small guilt free portions.
We make savorypaniyarams almost every week , but the sweet stuffed pancakes from a popular blog which I follow Mooreorlesscooking.com simply tempted me to try some immediately and there has been no stoping since then , as it is so easy and to try with many combinations.

2 cups all purpose flour
1 tsp baking powder
1 tbsp granulated sugar
1/2 tsp salt
3/4 cup yogurt (4 eggs seperated as per original recipe..).
2 cups buttermilk.
4 tbsp butter melted.
1 pint fresh blueberries ( I used pie filling )
confectioners sugar for dusting.
Maple syrup for serving. ( I served with caramel sauce )
In a bowl mix all the dry ingredients well, in another small bowl mix the wet ingredients gently mix the wet to the dry ingredients.
Heat an ebelskiver pan , add a little butter in each well. Keep over medium heat, drop 1 tbsp of batter in each well. Place 3 or 4 blueberries in on top of batter in each well, cover with a little more batter about 1 tbsp . Cook till the bottoms are golden or brown, approximately 3 minutes, turn them over with the help of a thin wooden stick., bamboo sticks.
With the help of skewers flip the pancakes over and cook till golden and crisp.about 3 more minutes.
Remove , keep on a plate.
Finish off the batter in this way.
Dust the pancakes with confectioners sugar and serve warm with maple syrup or any sauce of your choice.Tastes good as it is even without a sauce. The pie filling oozing out makes this a finger licking treat to both kids and adults alike.
History about Ebelskivers
Aebleskiver in Danish means apple slices..These are delicious sphere shaped pancakes, with or without fillings and cooked on special ebelskiver pan.Usually made of cast irons, these are now readily available in nonstick version too.
The batter for ebelskivers usually include wheat flour, buttermilk, eggs sugar and a pinch of salt.A pinch of baking powder is added for leavening.
The prepared batter is poured into each of the greased wells or indentation as they cook quickly, they are turned to the sides with help of knitting needles, bamboo sticks or skewer.
These are not sweet preparations but traditionally served with raspberries, strawberries or blackberry jam and sprinkled with powdered sugar.
