Having grown up on South Indian breakfast fare and some North Indian ones too, it is a bit difficult to break the habit, more because I just mechanically put the dishes together for our breakfast every weekend.
No doubt it is delicious and we like the usual menu , but when I do break the habit and remember we can have pancakes as well, it becomes a party !! I start experimenting with flavors, fruits etc .
Pancakes are not just kids favorites here, adults enjoy them as well.I love to make them gluten free and as healthy as possible.
Using oat flour and rice flour makes this one hearty breakfast and you can skip the daily bowl of oats porridge and experience the joy of eating healthy fruity pancakes..
1 cup rice flour
1 cup oat flour
2 tsp baking powder
Pinch of salt
1 cup milk
1 tbsp oil
2 tsp vanilla extract
Pinch of cinnamon powder
2 small ripe bananas
Take a bowl, add all the dry ingredients, whisk well.
In another bowl add the wet ingredients and blended bananas . ( make a puree of the bananas )
Now mix both the dry and wet till combined well to a pancake dropping consistency.
Take a greased pan, heat well, cook the pancake by placing a small ladle of batter in four sides or as much as your pan will accommodate. Keep the flame on medium.
Cook well on both sides till done.
Serve with any syrup, fruit compote or even pie filling..It tastes yummy.
