As much as I love cherries when they are in season , I have never thought of adding them to my cakes . I love eating cherries as they are but after looking at so many delectable, cherry cakes with the slightly oozed out cherries from the baked cake and lovely streusel strewn on with a golden tinge, I was hooked ! So a cherry cake it has to be and with a streusel topping mixed with some chopped walnuts to add a delicious crunch when you sink your teeth in the first morsel.
An absolute burst in your mouth cherry flavors.
This is a delicious recipe from Martha Stewart with some tweaks as usual.
Ingredients for the streusel topping
1/2 cup butter softened slightly.
3/4 cup all purpose flour
1/4 cup packed brown sugar
Pinch of salt
Pinch of ground cinnamon
Some finely chopped walnuts to be mixed with the streusel topping (optional )
1/4 cup granulated sugar
Ingredients for the cake.
1 1/2 cups all purpose flour
1 tsp baking powder
Pinch of salt
1/4 cup melted butter or oil
3/4 cup granulated sugar
3/ 4 cup whisked fresh yogurt
1 tsp vanilla extract
1/4. Cup buttermilk
1 1/2 cup fresh pitted cherries
Keep oven preheated to 350 degrees F / 180 degrees C. Grease a 9 Inch round cake pan or a spring form pan . Sprinkle flour and dust well, tap out excess flour. Spring form pan is convenient, so use if you have one.
Prepare the streusel topping first
In a bowl mix all the topping ingredients well , to resemble a coarse mixture like crumbs. Keep this aside.
In another bowl mix all dry ingredients well. Beat sugar and butter well till fluffy.
Add the whisked yogurt and vanilla.
Add buttermilk and blend gently .
Add the wet ingredients to the dry slowly and fold the batter gently.
Essential not to over mix the batter . Fold until just combined.
Now pour the cake batter into the prepared pan and tap to even out the batter.
Add the cherries all over and gently press them into batter. Now sprinkle the prepares streusel mixture all over.
Bake until the top is golden and a skewer comes out clean . Will take approximately 45 minutes depending on oven types.
Cool completely before attempting to un mould . This cake slices well .
