I can call this almost a zero fat sandwich as it uses no cheese and butter. Yet the taste was not compromised and relished by the school kid. High time we stopped thinking that cheese was a must in every sandwich , not really. You could however lightly spread a coating of olive oil on the bread on a side to be toasted.
Wholewheat bread slices.
1 cup cooked sweet corn
1/2 cup jalapenos ( drain well and wash if using the bottled variety.)
1 small bunch fresh cilantro leaves finely chopped.
1/2 cup chopped spring onion greens
1 cup finely shredded cabbage.
1/2 cup thin shreds of carrots.
1 tsp oregano
salt to taste
1/2 tsp chili flakes.
1 tsp mixed dried herbs.
1/2 tsp white pepper.
Prepare the filling mixture.
Coarsely grind to a paste , the cooked corn. In a pan add the coarsely ground corn, cabbage, carrots , jalapenos, and other spices, salt and let it cook till dry but not too dried out. Sprinkle some water if you think the mixture is drying out.
Remove and keep till cooled well. Add the greens, spring onion greens, cilantro leaves and mix the filling mixture well.
Spread on one side of the bread and cover. Grill it or toast in an oven .
When nicely browned, cut into smaller triangles.
Serve with spicy sauce or sweet sauce.
You can use cheese and butter if you wish, like grated mozzarella or cheese slices .
