I have never obsessed over baking , especially with bananas as I would rather eat them as fruits, but after seeing so many enticing posts of banana cakes, muffins and breads, I was completely bewitched and it had to be done.
One of the most homely wholesome cakes I have baked till date, a huge success as the warm toastiness of the moist sweet bananas with hints of cinnamon and the toasty crunchy walnuts altogether gave some terrific satisfaction.The best part of baking this fruity cake was it bakes up in a delightfully dense manner , yet ever so moist and fluffy.
Every morsel was so impeccably textured , fragrant with bananas yet not overly sweet . This is how the decadence begins!
I never realized the small batch I baked would disappear in a flash so another round of baking is definitely on the cards and this time I intend to make them as muffins with perfect streusel laden domes.That is for another day, meanwhile lets get down to the simple easy recipe.Basic recipe by Jennifer martin of Portland.
I have made some changes.
For the streusel topping
1/3 cup flour
1/3 cup firmly packed brown sugar
1 teaspoon ground cinnamon
1/3 cup chopped walnuts
1/4 cup butter, softened
2 tsp cocoa powder ( optional )
For the cake batter
1 1/2 cups all purpose flour ( combination of wholewheat flour and all purpose may also be tried.)
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup sugar or reduce if you wish to make a slightly less sweet cake.
1/4 cup oil
1/2 cup yogurt
1 1/3 cups mashed very ripe bananas
3 tablespoons buttermilk
oven to 350°F./180 degrees C
Grease your baking pan a, 8 inch
the streusel topping.
In a small bowl, combine the streusel ingredients , the flour, sugar,
very small pinch of salt, nuts and cinnamon. Use your fingers to
combine the dry ingredients, making sure to break up any brown sugar clumps.
Add the butter and work it into the flour mixture until it resembles coarse
meal. Set aside.
In a medium size bowl, mix the all
flour, baking soda, baking powder, and salt .Next beat the sugar, , and yogurt . Add mashed bananas and buttermilk. Add wet
to the dry slowly till just combined. Do not over mix the batter.
Slowly spread half of
batter in the greased pan. Sprinkle half of streusel. Again top with
remaining batter and finish with remaining streusel mix generously. Bake till a
skewer comes clean or till done golden .Approximate time will be around 45
minutes depending on oven types..
kept on a rack, keep the cake till completely
cooled for better slicing.

Adding chopped nuts, cinnamon, cocoa powder, salt, brown sugar .
Adding butter to make the streusel topping.
The streusel topping is ready resembling coarse meal.
Mixing the cake batter , adding wet to the dry and mixing till just combined.
Adding half the batter to the bottom of the pan.
Sprinkling some streusel over the bottom layer of batter, and adding remaining batter on top.
Adding the final remaining streusel topping mixture all over the top of the cake batter.
The cake finally done with lots of golden toasted walnuts peeking from the streusel topping.!
Let cool completely on a wire rack.
