Sanjha is a great tasty Maharashtrian breakfast recipe , like the upma made in South, though very fluffy and soft in texture.
There is a slight difference the way it is cooked compared to upma.
1 1/2 cup semolina /sooji
3/4 cup very hot water
1 onion chopped finely
2 to 3 green chillis chopped .
2 tsp groundnuts
sprigs of curry leaves.
1 tsp mustard seeds
1 tsp cumin seeds.
Pinch of turmeric powder
salt to taste.
2 tbsp cilantro chopped. for garnish.
4 to 5 tsp oil or 2 tbsp ghee
2 Tbsp fresh grated coconut ( optional )
Fist dry roast the sooji in a skillet for some time till they turn light golden colour.
Keep the roasted sooji aside.
Heat oil in a pan, fry the peanuts, add mustard seeds, cumin seeds, pinch of asafoetida powder, curry leaves,add green chillies, onions, turmeric powder.
Mix well, add roasted sooji, keep stirring , add hot water slowly in portions and keep stirring.
when the sanjha is done and looking fluffier, garnish with grated coconut if you wish, add some drops of lime juice for a great flavour.
It can also be eaten with yogurt, pickle, or with fine sev sprinkled on top.
