One might wonder what is the deal about a simple Onion tomato pachadi?? Well you may have a great array of dishes around the plantain leaf, tempting you , but it is these simple small servings of pachadis, like mango, cucumber, beetroot and many other vegetables like carrots that will entice you at first .
Each of these simple but delectable pachadis will tempt your taste buds .Tastes a bit like the North Indian Raita which is usually served with rice preparations like Pulav.
1 cup finely chopped onions
1/2 cup finely chopped tomatoes.
1 tbsp chopped green chillies. for seasoning
2 green chillis
salt to taste
1 tsp grated minced ginger
sprigs of curry leaves.
1 cup yogurt whisked.
1/2 cup grated fresh coconut
1 tsp mustard seeds used while grinding.
1/2 tsp cumin seeds
1/2 tsp methi/fenugreek seeds
1/2 tsp mustard seeds for tempering.
2 tsp coconut oil
Take a small bowl and add the choppe donions and tomatoes, sprinkle the salt, and grind in the small mixie jar, fresh coconut grated,2 green chillis , ginger, cumin seeds, 1 tsp mustard seeds and make a little coarse paste.Add little yogurt while grinding.
Add the ground paste to the onions and tomatoes, stir well.
Add a seasoning of mustard seeds in 2 tsp coconut oil, chopped green chillis curry leaves and pour seasoning on the pachadi.
