Broccoli parathas are a great way of sneaking some healthy veggies in your school kids lunch box, they look so attractive with the pale yellow , green flecks of broccoli seen in the parathas.
1 cup of lightly cooked, drained broccoli florets.
2 cups of whole wheat flour approximately.
Pinch of salt.
Pinch of asafoetida powder.
1 tsp ginger, green chilli paste.or finely chopped green chillis.
1 tbsp chopped coriander leaves.
A pinch of turmeric powder.
A pinch of garam masala
1 tbsp oil
In a bowl, add the lightly cooked broccoli florets and add the flour with spices to it. Add the oil and knead the mixture without adding water to it as the broccoli will release lot of water when cooked, so you need to add as much flour to make a smooth dough.
Keep the dough aside for fifteen minutes.
Prepare the paratha by rolling out slightly thicker discs than normal rotis. Dust with flour if necessary.
In a flat pan , grease with oil first, place the paratha to cook when the pan is hot, and add some oil around the disc, and flip to cook on the other side.
Enjoy delicious broccoli parathas with raita or pickle.
