We are fond of thorans at home, which is nothing but such finely chopped vegetables,seasonind with coconut and grated chillis or ground chillis,
We use green beans quite frequently , either to make such thorans or as paruppu usili,
1 cup finely chopped beans
1/2 tsp mustard seeds,
1/2 tsp split udad dal
1 red chilly
To coarsely grind without adding water
1-3 green chillies
Pinch of turmeric powder
some chopped shallots ( optional )
2 tbsp fresh grated coconut
salt to taste.
Pinch of asafoetida powder.
some curry leaves for garnish.
2 Tsp oil ( preferably coconut oil)
In a big pan, add some oil, when heated, let the mustard seeds pop, udad dal become brown , add some curry leaves, add the chopped green beans, pinch of asafoetida powder,salt ang sprinkle some water just enough to cook the beans till soft.
Meanwhile grind the coconut with green chillis, turmeric powder, chopped onions, and make a rough paste. When the beans have cooked well, add the grated coconut paste, stir well.Let the beans cook for few more minutes after adding the coarsely ground paste .
In my pic below I did not add onions as my daughter doesnt like it this way but thorans are typically made in the manner mentioned above. Make your own small tweaks to this yummy simple recipe from Kerala
