Sprouted Green gram salad





This version of a sprouted salad can be prepared with lightly cooked sprouts , adding tomatoes, onions and a tempering of mustard seeds if you wish. I also added some fenugreek seeds sprouted so this is one power packed salad . Use lemon salt and mango powder to enhance the taste to a tangy sourness.

Ingredients used


1 cup of sprouted green gram ( moong )
1/2 cup chopped onions
1/2 cup finely chopped cherry tomatoes
1/4 cup sprouted fenugreek seeds
1 tbsp chopped cilantro
1 tbsp finely chopped green chillis
Pinch of asafoetida powder
Pinch of lemon or garlic salt
1 tbsp lime juice.
1 tsp mango powder ( optional )
1/4 cup grated raw mango if available and in season , or else skip it.

For tempering

1 tsp oil
1/2 tsp mustard seeds

Method :

In a pan, heat the oil, add the mustard seeds, let it pop, add the chopped green chillis, add some curry leaves if available, pour the seasoning over the salad vegetables, mix well and add all the ingredients except salts, and lime juice to prevent watery salad. Keep it in the fridge and add them at the time of serving.

Tip


If you are wary of eating raw sprouts, steam them in a vegetable steamer and use immediately.
