Raw split green gram ( moong dal )salad ( Kosambri )

This is such a delightful raw healthy salad bringing memories of my childhood.A very popular salad from Karnataka mostly, where we lived, my mother would often  make , well almost every day , this particular salad, tickling our taste buds, with the hint of lime, the crunch of cucumber , or the sweetness of carrots.

In my recipe I made a Kosambri with soaked raw Moong dal ( split green gram ) and used raw grated green mangoes and they simply lifted the taste of the humble salad to a new high.

Kosambri can be prepared with carrots, cucumbers, shallots , but basically the prep methods remain the same.

Just soak some moong dal in water for 20 minutes, drain well and keep aside.Grate raw green mango, do a tadka of green chillies finely chopped, mustard seeds, add chopped coriander leaves, add salt or lime juice, mix everything together, add grated fresh coconut on top for ultimate taste, pinch of asafoetida, this was the typical salad my mom often made, added some tender cucumbers too, finely grated ginger...I did not add cucumber, and coconut. if you do not like the raw moong taste so much, then cook it till just soft, as moong cooks fast, keep an eye, remove when you can mash with fingers, then drain well, then same procedure...we do it both ways..


1 cup Split green gram ( moong dal ) soaked for couple of hours at least.
1/2 cup grated green raw mango
1 tbsp lime juice freshly squeezed.
1/2 tsp mustard seeds.
Pinch of asafoetida powder.
1 tbsp chopped cilantro
1 tbsp finely choppped green chilis
2 tbsp grated fresh coconut
some curry leaves to garnish.
1 tsp oil for seasoning.
Add pinch of salt if necessary.


Take out the Soaked split  green gram , drain water completely till very dry.

In a pan, add the oil, crackle the mustard seeds, add the green chilis, curry leaves, then add the drained green gram dal, grated raw mango and stir well. Add the cilantro, pinch of asafoetida powder.
When it looks nicely dry, remove and cool for some time.
Add the juic eof lime and mix well.
Garnish with fresh grated coconut if you wish.
This makes a great tasty, tangy salad, packed with nutrition and keeps you full.


Finely chopped onions, carrots grated  can  also be  added   , or a seperate salad can be made using those vegetables.
