Quick mixed veg stir fry








I love these quick stir fries especially when the vegetables used are quick cooking, you save a lot of time and can enjoy the pleasure of having so many colorful veggies in a platter.Such recipes are good for beginners or bachelors.



Ingredients:


1 cup cauliflower florets
1/2 cup cooked green peas.
1/2 cup chopped red bell peppers or yellow bell peppers.
1/2 cup carrots peeled and  chopped

2 tbsp chopped coriander leaves.
1 tsp grated ginger
2 or 3 green chillis chopped or slitted

Pinch of turmeric powder.
1 tsp coriander powder
1/2 tsp cumin powder
Pinch of mango powder ( optional )

To temper

1 tsp cumin seeds
2 tbsp oil

Method:


In a pan add some oil, letit heat, add the cumin seeds, let it brown and swell, add the green chillis.
Add the green peas, cauliflower florets, chopped carrots, chopped peppers and any other vegetables you choose to add.

Toss the vegetables in the oiled sauteed ingredients, then add the spice powders one by one. Add salt and when the vegetables look done, but still some crunch in them you can remove from the flame . Garnish with coriander leaves.

Note
Adding Onions and   garlic paste is a choice.
