My summer salad with Kiwis

My Summer Salad:

As the summer is very hot and we do not feel like eating full meals so a summer salad is called for which is tasty and includes our favorite fruits.

You need:

2 or 3 small  ripe kiwis, peeld and sliced .
2 or 3 small garden fresh cucumbers , peeled and thinly sliced
1 cup of finely chopped spinach ( washed and dried before chopping)
3 or4 small ripe cherry tomatoes sliced.
1 red bell pepper roasted lightly to retain the crunch

2 or 3 tbsp of almonds slivered.
pinch of sea salt or lime salt.
3 tbsp of finely chopped cilantro
3 tbsp of finely grated or roughly crumbled cottage cheese or any variety you prefer.
2 tsp of finely chopped green chillies to give a sharp spike. Deseed the chillies.

For the dressing

2 tbsp of fresh lime juice
2 tbs of cilantro chopped
1/2  tsp of  white pepper
1/2 tsp of mango powder  ( optional)
1 or tsp of olive oil (optional)
1/4 tsp of coarse salt or lime salt

Mix all the dressing ingredients well  and toss all the chopped veggies and kiwis to coat well. Do not mix too much and make the kiwis mushy.Garnish with chopped coriander/cilantro leaves and top with crumbled cheese.
