This is one of our most favourite Carrot salad which we like to temper by using mustard seeds and green chilis.
1 Cup finely grated carrots
1/2 cup chopped tomatoes ( optional )
1 tbsp finely chopped green chilis.
Pinch of asafoetida powder.
1 tbsp lime juice.
Pinch of chaat masala powder
1/2 tsp mustard seeds for tempering.
1 tbsp chopped fresh coriander leaves.
1 tsp oil for tempering.
In a pan, heat the oil, add the mustard seeds, let it crackle, add the green chillis and then pour the tempering over the the finely grated carrots, chopped tomatoes. Add the chopped coriander leaves, pin ch of asafoetida powder, chaat masala powder ( optional ).
Mix well. add the lime juice and again stir well . Keep in fridge to chill till serving time.
You can also make delicious salad without adding tomatoes too.
