These Kuzhi Paniyarams were made with no oil, just greased the wells of the paniyaram pan.
To keep them moist, cover them with a lid while cooking on a medium flame.
1 cup thick dosa batter.
2 tbsp rice flour
2 tbsp chopped green chillis
1/2 cup chopped and coarsely pureed beet root
salt to taste
Pinch of asafoetida.
1 tbsp finely chopped coriander leaves.
Keep the paniyaram pan to heat on medium after greasing the wells with oil.Drop batter just slightly below the top and cook covered. Turn the paniyarams to cook evenly o all sides.
Serve hot with roasted gram dal chutney or any accompaniment of your choice
Usually paniyarams are made with little oil in each well and the batter is bit fried in the oil ,you can choose to make it the usual way.
Adding onions and garlic to the batter is another option.
I served this with gram dal chutney, by grinding chillis, 1/2 cup of roasted gram dal/ pottukadali, 1 tbsp fresh coconut ( optional ) , grated ginger.
