Baby Potatoes and spring onion curry

A simple stir fry , this amazingly ordinary looking baby potatoes tossed in spices and sprinkled with spring onion greens is a a treat to have as a dish to go with rice or phulkas rotis.

Potatoes am sure is the most loved and hated vegetable, but this way you can enjoy the goodness without the excess oil or deep frying as neither is involved.





Ingredients:


200 grams of cleaned baby potatoes.
3 tbsp finely chopped spring onion greens.
1 tsp chilli flakes
1/2 tsp white pepper
salt to taste.
Pinch of turmeric powder.
Pinch of asafoetida powder
1 tsp cumin seeds
1/2 tsp mustard seeds.

3 tsp oil for tempering.


Method:


1. Pressure cook the potatoes till just cooked but not too soft, peel and keep aside.

2. In a pan add the oul, crackle the mustard seeds, add the cumin seeds, and add the potatoes, add all the powders and the salt.

3. Toss the potatoes well in the spices and then add the spring onn greens in the end so you  can retain the fresh green colour of the dish which looks very appetising .

4. For more spicier version  increase the chili powder to your taste.

This is a very easy to prepare dish for youngsters and bachelors and a great dish to carry with school lunch box , with rotis and rice.


Notes


You can add the onions of the spring onion greens too , but slice them fine, saute them well after the tempering, let it urn transparent, then add the potatoes and toss in the spices.
