1/2 cup Whole coriander seeds
1/4 cup cumin seeds/jeera
1 tbsp cloves/laung
6-8 nos Big cardamom /badi elaichi
5 small cardamoms/ choti elaichi
2 inch pieces 6 nos Dalchini/cinnamon
1 tbsp whole black pepper
4 red dry chillis
1 small nutmeg/Jaiphal
1 small piece of dry ginger/saunth
8 bay leaves/tejpatta
1-2 star anise
Take a pan and lightly dry roast the masalas one by one.
let it cool and grind to a fine powder.
Store in an air tight box.
This is a very handy powder to have for all your North Indian dishes which calls for use of garam masala.
