Dhaniya jeera bhindi/ spicy okras
I have some easy to prepare okra recipes that are totally fuss free with no elaborate procedures . Just some kitchen spice powders readily available and you are done.
This recipe calls for a little more addition of coriander and cumin powders also called daana jeeru powder. These amazing powders does something to an otherwise ordinary vegetable.
Sometimes simple is tasty. My experience .
250 gams of okras / bhindis
1 1/2 tsp cumin powder
1 1/2 tsp coriander powder
1 tsp red chilli powder
Pinch of asafoetida powder
Pinch of mango powder
Salt to taste
1 tbsp oil
2 tbsp fresh chopped coriander leaves
1 tsp cumin seeds
1/2 tsp mustard seeds
Wash clean and wipe dry the okra.
Trim the heads and tails and chop them.
Heat a pan, add oil , add cumin seeds, crackle mustard seeds.
Add the okras and stir well in the oil .
Then add all the remaining powders , add salt .
Cook covered without adding water. Give a good stir in between.
The steam inside will help cook the dry okras without making it sticky and slimy.
Serve hot with phulkas or rice.
