A very easy to prepare stir fry using grated or finely shred cabbage and spring onions.
The is a tasty side dish for those in a hurry and cannot fuss with fancy ingredients , blending, etc.
Cabbage stir fry as such is a common preparation and also some tasty thorans are also made using crispy cabbage garnished with grated coconut and finely chopped green chillis.
The simple recipe
1 small cabbage chopped into thin strips
1 bunch of fresh green spring onions chopped fine.
3 small green chillis
1 tsp grated ginger
Salt o taste
2 tsp oil
1/2 tsp mustard seeds
1/2 tsp split udad dal
1/2 tsp cumin seeds
Take a deep stir frypan, or a stir fry wok , add the oil. Crackle the mustard seeds add the udad dal and cumin seeds.
Add the green chillis and ginger . Stir all the way while adding the ingredients so that the vegetables get cooked evenly .
Add the chopped chives and save some of the green parts of the spring onions for garnishing at the end.
Keep stirring quickly, add the chopped cabbage strips.
Add salt and stir the whole pan quickly.
No need to add water as we need the stir fry to have some crunch as well .
Check for salt and when the stir fry appears done, sprinkle the finely chopped greens of the spring onions and give a quick stir.
Keep the flame on a medium to high throughout the cooking as we need to almost fry the vegeta lea and a crisp texture .
This is a great side dish to go with rice or rotis and stays good for a dry side accompaniment for school lunch box.
