Wheat flour crepes ( Godhumai Dosa )











Godhumai Dosa or wheat flour crepes come in the category of quick fix breakfast or evening snack break option. It is difficult to have stock of batter to make regular dosa through the week and  also it gets a tad boring too to have it every single day. It is at such times I depend on wheat flour dosas ( crepes ) to give an interesting choice which is like by all.


The simple wheat flour which is available in every household gets a great makeover when made into spicy dosas with  finely chopped green chillis, cumin seds, chopped coriander and grated ginger are added to the batter.

That’s it!! That’s the recipe. Seriously!!

Well if you want the precise recipe to follow, here goes….




















Ingredients: 

2 cups wheat flour
½ cup rice flour
Pinch of asafoetida
Salt to taste
1 tbsp finely chopped green chillis
1 tbsp chopped coriander leaves.
½ tsp cumin seeds.
Sufficient water to make the batter.

Method:


First take the flours , add all the ingredients one by one in a a big bowl, add enough water to make a batter which should be slightly thinner than normal dosa batter but not runny.

Use a whisk to blend all ingredients and the flours to get a smooth lump free batter.

 Heat a non stick pan, let it get heated well, then take a big ladle of the batter and make quick swirls, don’t keep spreading it slowly as lumps will form or will get disconnected.

This batter is unlike regular batter where you can afford to make swirls slowly and try to make as thin as possible. The gluten in the flours will get sticky on the hot pan and you will not be able to make smooth swirls. Takes a bit of practice , but you will get delicious , mildly spiced dosas.

Godhumai dosa will taste great when served hot with chutneys, sambar or Chutney powder.



Options:

You may add finely chopped onions too to the batter.
