Methi Paratha ( Indian flatbread using fenugreek leaves and some spices )











Parathas are nothing but wholewheat Indian breads stuffed with any mildly spiced mashed vegetable. Popular among parathas is the aaloo parathas. 

We love to have methi /fenugreek leaves parathas anytime as it is so much full of nutrition, power packed. There is nothing like a couple of methi parathas in the morning for brunch or breakfast with yogurt and some spicy pickle.

I prefer to make this parathas as often a I can as it is a filling food and good for lunch box too.
I also do not make this paratha by slathering ghee or oil , but simply cook on a hot pan with just some dots of oil .This way we can have more parathas without the unnecessary addition to calories .

Ingredients:


1 cup tightly packed washed , cleaned finely chopped fenugreek leaves/methi
2 green chillis finely chopped
2 cups whole wheat flour
1 tsp grated garlic( optional)
2 tsp oil
salt to taste
2 tbsp chopped coriander leaves
Water enough to make a smooth dough.

Method


1. take a bowl, add the wheat flour, and all the ingredients except water and mix well. then slowly add water little by little to make firm but sooth dough.

2. Let the dough be covered and rest for 30 minutes if you have the time.

3. Roll out into discs or rounds like rotis but a little thicker and cook on a heate dpan. Add oil when one side seems done and the flip over and smear more oil all ove the paratha.

4.. When the parathas get golden spots all over and look like toasted, then  remove and stack on a plate.

Serve hot with curd and pickle.

The compounds present in fenugreek help lower LDL- Cholesterol levels by inhbiting bile salts re absorption in the colon.

It helps to increase the bulk of the food and augment bowel movements,helps in easy digestion and relieve constipation.

The seeds are used in traditional medicines to make laxatives, digestive and as a remedy  for cough and bronchitis.

If used regularly fenugreek seeds help control cholesterol, triglycerides as well as high blood sugar ( glycemic ) levels in diabetics.
