There is so much you can do with apples apart from the zillion smoothies and juices.
I had a big load of apples to finish up quickly though they seemed to keep good in the fridge for long.
I had tried many chutneys, sauces, smoothies and for salads too.. Then I stumbled upon a very good recipe

Apple cinnamon loaf.
So here is the recipe for the simple but delightful cake .
I decided to bake in a bundt pan, though a loaf tin would have been better to get neat slices.
As you can see the texture was great, the crumb and crust was perfect.I made this cake as an eggless one but can bake the original way using the eggs mentioned in the recipe which I have given.
½ cup plus 1 tbsp butter ( A stick and a tbsp. of butter )
1 teaspoon ground cinnamon
1/2 cup chopped walnuts
2 eggs ( I substituted with whisked yogurt
approx. ¾ cup )
1 ½ teaspoons vanilla extract
1 ¾ baking powder or 1 teaspoon baking soda
1 apple, peeled and cut into small pieces.
need: 9x5 inch pan, lined with parchment paper.
1. Mix in a bowl brown sugar and cinnamon.
2. In another bowl mix butter and white sugar in a mixer
3. Add the eggs ( yogurt)
one at a time and mix. Then , add vanilla extract.
4. In the other bowl sift the flour with baking
5. Now add flour mixture to the butter and stir,
then mix milk until smooth.
6. Pour half the batter into the pan, add half the
apples and half the brown sugar mixture.
Add the chopped walnuts, then pour the remaining batter, apple and brown
Lightly pat apples into the batter.
Bake in a preheated oven to 175C for 30 to 40 minutes .
This is a delicious and not a very sweet cake, so perfect with a cup of coffee.
