Quick Easy Veg Wraps

Quick easy wraps from rotis/flour tortillas


I often thought of making wraps the original way using tortilla flour but I also wanted the easier way without compromising on the taste and convenience that wraps offer.

Here's my take on the everyday wraps that can be made from the good old chapati/roti

I prefer to use only whole wheat flour for the rotis and made like phulkas
The greatest thing about making wraps is that there is no specific recipe as such as you get to customize your fillings and the spread.

For my wraps the simplest ingredients I used were.

As you can see grated veggies like bell pepper,cabbage,carrots,coriander leaves,sprouts from green gram.






Ingredients here are some crumbled cottage cheese,green chutney, finely chopped green mangoes! as my daughter wanted a little sour tangy taste.



 On the right  side you can see some home made cottage cheese and dried herbs.











Fold it either this way or simply roll it up tightly.and make angled cuts.



  Wrapping this way ensures you don't drop the fillings!

Finely  grated chopped veggies like cabbage,carrots,bell peppers,tomatoes and finely cut deseeded green chillies to add the pungent taste.


Quickly stir fry all the veggies but lightly so as not to lose the crunch. Add salt,white pepper,green chilli sauce which is optional .Depending on the pungency desired these can be added. Let the cooked filling get cooled before wrapping. Thee is no need to stir fry. I prefer to finely grate the veggies and use them as it is.

 The veggies may be of your choice and as per your kids taste.keep the filling as dry as possible .You dont want to make the wraps soggy.

I made simple spread like a combo of coriander,green chillies and cottage cheese blended in the mixie to  get a spread like consistency.

I also used a egg free mayonnaise which  can be made easily at home. I blitz some fresh cream, cottage cheese home made and some white pepper and add some herbs  and I have the creamiest smooth egg free mayo all home made and fresh!

 My own  green chilli sauce which I normally use for rice items. Anything works for wraps.!

Procedure


As usual prepare chapatis /rotis and spread the sauces,mayo,coriander/chilli/cheese spread and then keep the fillings along the middle portion. Dont get tempted to over fill as the wraps are likely to tear and the purpose is defeated.
the pics below will generally show how it is done.Your kids can do this and they can choose the filings.This makes a very good lunch box filling snack. Pack them individually in aluminium foil.

Notes:

1. You can make a simple green chutney for the spread by using the following.
  • fresh chopped coriander leaves 
  • some mint leaves if you like the minty taste of the wraps
  • a small piece of garlic .
  • depending on the quantity of coriander leaves you can add little cottage cheese.
  • pinch of salt
  • dash of lime
  • pulse all the ingredients to get a smooth spread like paste.Use this spread for the wraps

Filling Ingredients:

  • your own combination of favorite veggies all finely grated. Add some finely deseeded green chillies to add that spike in taste. 1 tsp   of lime juice.
  • sprouts can be added to enhance the nutritive value.
  • cottage cheese crumbled  add to the taste.
  • combine all the grated veggies with pinch of lime salt,white pepper,mayonnaise so that the filling ingredients remain bound and not fall apart.

Method:


Open the tortillas/rotis and spread the green chutney carefully all over. keep the filling along the side of one corner and make a tight wrap. Cut at an angle to get an attractive look. Make wraps only at the time of serving.

The filling  can be made ahead and stored in refrigerator to make as many wraps as you want to make a quick filling snack or even a lunch on the go option for kids on the move!  Keep fresh store bought or home made tortillas /rotis in the fridge .

Another version of easy veg wraps


No need for any chutneys, spreads etc,this is even quicker if you have all the necessary vegetables ready .
You are good to go.

Ingredients:


Tortillas/rotis/phulkas
1/2 cup finely chopped cabbage
1/2 cup finely chopped beans
1/2 cup finely peeled copped carrots.
1/4 cup moong sprouts or any of your choice.
1/4 cup finely chopped fresh spring onion greens
Handful of freshly chopped coriander leaves
1 tbsp finely chopped green chillies
2 tbsp some jalepenos chopped or sliced.
3 tbsp shredded mozzarella

Spices needed

1 tsp oregano
1tsp garlic bread seasoning/ or finely minced garlic will do.
salt to taste.
1 tsp chilli flakes




Blanch the vegetables, drain well.




 Mix all the spring onion greens, coriander leaves, check for salt.













































 Procedure:


Blanch all the vegetables except the coriander leaves , spring onion greens. Dont cook  for toolong to make them too soft. The veggies should retain the crunch.

Remove, drain well till almost dry.
In a pan put some drops of oil, first add the green chillies , so that the oil gets infused with the spice,then   saute the vegetables lightly to retain the crunch.Add all the spices except the cheese. Toss the vegetables well in the spices.

Remove, keep aside to cool, then add the spring onion greens, coriander leaves.

Assembling the wrap


Take a  tortilla /roti, place the mixed vegetables in the center along the tortilla, and then add the grated cheese a shown in the pic above, roll up tightly, cut to serve or as it is.

While packing this for school lunch box, make sure to first layer a lettuce leaf, or spinach leaves, cabbage leaves on the tortilla first and then place the fillings on the leaves, so that it doesn't become soggy.
